Ingredients

  • 1 whole chicken (cut into pieces)
  • 2–3 potatoes (cut into slices or chunks)
  • 2 teaspoon tomato paste
  • 3 cloves garlic (minced)
  • 1 small bunch parsley (chopped)
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • Salt to taste
  • 1/2 teaspoon turmeric (optional)
  • 1/2 teaspoon chili powder (optional)
  • 1/2 cup juice lemon

Instructions

  • Step 1: Prepare the base
    Preheat oven to 200°C (400°F)
    In a baking dish, add:
    Tomato paste
    Olive oil
    Garlic
    Parsley
    Spices + juice lemon
    Mix everything well
    Step 2: Add chicken
    Place the cut chicken pieces on top
    Mix the chicken well with the sauce so it’s fully coated
    Step 3: Add potatoes
    Add potatoes on top
    Step 4: Bake
    Cover with foil and bake for 40 minutes
    Remove foil and bake for another 20–25 minutes until golden
