  • 400–500g chicken tenders
  • 3–4 potatoes (cut into round slices)
  • 2 tablespoons tomato paste
  • 2–3 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 small bunch parsley (chopped)
  • Salt & black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric (optional)
  • Juice of 1/2 lemon
  • 1/2 cup water

Instructions

  • Step 1: Prepare base
    Preheat oven to 200°C (400°F)
    Arrange potato slices at the bottom of a baking dish
    Step 2: Add chicken
    Place chicken tenders directly on top (without seasoning)
    Step 3: Prepare sauce
    In a bowl, mix:
    Tomato paste
    Olive oil
    Garlic
    Parsley
    Salt & pepper
    Paprika & turmeric
    Lemon juice
    Water
    Step 4: Assemble
    Pour the sauce evenly over the chicken and potatoes
    Step 5: Bake
    Cover with foil and bake for 35 minutes
    Remove foil and bake another 15–20 minutes until golden
