Equipment

  • 2 cups tomato sauce (or fresh blended tomatoes)
  • 1 small bell pepper (finely chopped)
  • 4–5 eggs
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 small onion (chopped)
  • 1 teaspoon paprika
  • 1 teaspoon cumin (optional)
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh parsley
  • Bread (for serving)
  • 1 teaspoon Concentrated tomatoes

Instructions

  • Heat olive oil in a pan over medium heat
    Add chopped onion and cook until soft
    Add chopped bell pepper
    Add garlic and cook for 1 minute
    Pour in tomato sauce
    Add paprika, cumin, salt, pepper, parsley, and chili
    Let it simmer for 5–10 minutes
    Make small holes in the sauce
    Crack eggs into each hole
    Cover and cook until eggs are set
    Garnish with parsley and serve hot with bread
