Ingredients

  • 2–3 tomatoes (cut into round slices)
  • 2–3 eggs
  • 1/2 cup mozzarella cheese
  • Pepperoni slices
  • Fresh parsley (chopped)
  • Salt & black pepper
  • 1–2 tablespoons olive oil
  • Chili flakes (for garnish)

Instructions

  • In a bowl, beat the eggs with chopped parsley
    Heat olive oil in a pan
    Add tomato slices and fry for a few minutes until slightly soft
    Pour the egg + parsley mixture over the tomatoes
    Add salt and black pepper
    Add mozzarella cheese
    Add pepperoni slices
    Cover the pan and cook on low heat until eggs are set and cheese melts
    Garnish with chili flakes before serving
