Ingredients

  • 250g pasta
  • 2 tablespoons olive oil
  • 5 medium tomatoes
  • 1 small onion, chopped
  • 1/2 cup cooking cream
  • 1/2 cups shredded mozzarella cheese (divided)
  • 1 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup tomato sauce (for the baking dish)

Instructions

  • Step 1: Cook the Pasta
    Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
    Step 2: Prepare the Tomato Sauce
    Heat the olive oil in a large skillet over medium heat. Add the whole tomatoes and chopped onion. Cover the pan and cook until the tomatoes are soft and tender.
    Step 3: Make the Creamy Sauce
    Mash the tomatoes and onion directly in the pan until a rustic sauce forms. Season with salt and black pepper, then stir in the fresh parsley. Add the mozzarella cheese and cooking cream, stirring continuously until the cheese has melted and the sauce is smooth and creamy.
