These Crispy Baked Chicken Drumsticks with Roasted Potatoes are a flavorful and satisfying oven-baked meal that's perfect for family dinners or special occasions. The chicken is marinated in a delicious blend of ketchup, soy sauce, fresh garlic, sparkling water, and aromatic spices, allowing every drumstick to become juicy, tender, and full of flavor. After marinating, each drumstick is coated in crispy breadcrumbs and baked until beautifully golden and crunchy.

Ingredients

  • 6–8 chicken drumsticks (or as needed)
  • 3 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1/4 cup sparkling water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup breadcrumbs
  • Wooden skewers (3 short skewers for each drumstick, if needed for support)
  • For the Roasted Potatoes
  • 4 medium potatoes, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 8–10 cherry tomatoes

Instructions

  • Step 1: Marinate the Chicken
    In a large bowl, combine the ketchup, soy sauce, minced garlic, sparkling water, salt, black pepper, paprika, and dried thyme. Mix well until smooth. Add the chicken drumsticks and coat them evenly with the marinade. Cover and refrigerate for at least 1 hour to allow the flavors to fully develop.
    Step 2: Prepare the Potatoes
    Arrange the potato slices in a baking dish. Drizzle with olive oil, then season with salt, black pepper, paprika, and fresh parsley. Scatter the cherry tomatoes around the potatoes and toss gently to coat everything evenly.
    Step 3: Coat and Arrange the Chicken
    Remove the marinated drumsticks and coat each one evenly with breadcrumbs. Insert three small wooden skewers into each drumstick to help it stand upright if desired. Arrange the drumsticks standing over the potatoes so the juices can drip down while roasting, adding extra flavor to the potatoes.
    Step 4: Bake
    Preheat the oven to 200°C (400°F). Bake for 45–55 minutes, or until the chicken is fully cooked with a crispy golden coating and the potatoes are tender and lightly caramelized. If needed, switch on the broiler for the last 3–5 minutes to achieve an extra crispy finish.
    Step 5: Serve
    Carefully remove the skewers before serving. Garnish with additional fresh parsley and serve the crispy chicken drumsticks alongside the roasted potatoes and cherry tomatoes. Enjoy this hearty meal with your favorite dipping sauce or a fresh green salad.
