baked chicken skewers with rice

This oven-baked chicken skewers with rice and vegetables is a complete and satisfying meal made in one dish. Juicy chicken pieces are marinated with simple spices and threaded onto skewers, then baked over a flavorful mixture of rice, peas, carrots, tomato, and onion.

Ingredients

  • 2 chicken breasts (cut into cubes)
  • Wooden skewers
  • 1 cup rice
  • 1/2 cup peas
  • 1–2 carrots (small pieces)
  • 1 tomato (chopped)
  • 1 onion (chopped)
  • 2–3 tablespoons olive oil
  • 2–3 cloves garlic (minced)
  • Salt & black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric (optional)
  • 2 tablespoons yogurt
  • 1 teaspoon dried parsley
  • Fresh parsley (chopped)
  • 2 cups water or broth

Instructions

  • Step 1: Prepare the chicken skewers
    In a bowl, add chicken cubes
    Add:
    Olive oil
    Garlic
    Paprika
    Salt & pepper
    Yogurt
    Dried parsley
    Mix well and leave for 10–15 minutes
    Thread chicken onto skewers
    Step 2: Prepare the rice & vegetables
    In a baking dish, add:
    Rice
    Peas
    Carrots
    Tomato
    Onion
    Add spices, salt, olive oil
    Add fresh parsley
    Pour water or broth and mix well
    Step 3: Assemble
    Place the chicken skewers on top of the rice mixture
    Step 4: Bake
    Cover with foil and bake at 180°C (350°F) for 30–35 minutes
    Remove foil and bake another 10–15 minutes until chicken is golden
