Ingredients

  • Cucumber (chopped)
  • Lettuce (chopped)
  • Red cabbage (shredded)
  • Red & yellow bell peppers
  • Onion (sliced)
  • Cherry tomatoes (halved)
  • Green olives
  • Feta cheese (cubed)
  • Fresh parsley (chopped)
  • Lemon juice
  • Salt & black pepper
  • Olive oil
  • Dried thyme (optional)

Instructions

  • Chop all vegetables: cucumber , lettuce , cabbage , peppers , onion , and cherry tomatoes
    Place everything in a large bowl
    Add:
    Green olives
    Feta cheese
    Fresh parsley
    Add lemon juice
    Add salt & black pepper
    Add dried thyme (optional)
    Drizzle olive oil
    Mix everything well
    Serve fresh
