Baked Sweet Potato

This Baked Sweet Potato with Chicken & Eggs is a rich and comforting oven dish made with a soft and slightly sweet potato base. The sweet potatoes are boiled, mashed, and lightly baked to create a perfect base for the toppings.

Ingredients

  • 3 sweet potatoes
  • Cooked chicken (chopped)
  • Cherry tomatoes (halved)
  • 1 onion (chopped)
  • Bell pepper (cut small)
  • Feta cheese (small cubes)
  • Mozzarella cheese
  • 3 eggs
  • Fresh parsley (chopped)
  • Fresh coriander (for garnish)
  • Salt & black pepper
  • Olive oil

Instructions

  • Step 1: Prepare sweet potatoes
    Boil 3 sweet potatoes until soft
    Place them in a baking mold
    Add a little olive oil
    Cut them into halves and mash
    spread evenly in a baking mold
    Add:
    Salt
    Black pepper
    Olive oil
    Bake for a few minutes
    Step 2: Prepare filling
    In a bowl, add:
    Chopped onion
    Cherry tomatoes
    Bell pepper
    Cooked chicken
    Feta cheese
    Fresh parsley
    Add eggs
    Add salt & black pepper
    Add mozzarella cheese
    Mix everything well
    Step 3: Assemble
    Remove sweet potatoes from oven
    Pour the mixture over them
    Add extra mozzarella on top
    Step 4: Bake
    Return to oven and bake until eggs are set and cheese melts
    Step 5: Garnish
    Garnish with fresh coriander
